What I’m Eating
Andrew and I officially got ourselves an air fryer! Best decision yet. We purchased the Instant Vortex Air Fryer off of Amazon, this one was recommended to me by my bestie, Britt. And y’all we LOVE it. So I’ve already been cooking up a storm with it, it’s a lot of experimenting especially with the cook time per temperature. Many recipes that I look up online vary so trial and error has been my go-to method. So far we’ve made the infamous buffalo cauliflower, some wings, french fries (and sweet potato fries), burgers, and my favorite yet- lobster and shrimp.
Today I’m going to try some homemade donuts that I’m VERY excited for so stay tuned for that!
What I’m Reminiscing
This past MDW, Andrew and I did some great sightseeing adventures. In particular, I’m reminiscing this amazing place- The Indian Paint Mines, it was such a unique and cool spot, simply unforgettable.
What I’ve Been Loving
Having time off. It’s been so liberating and my mind is at peace. I’m so grateful, (considering the circumstances) but since things are the way they are, the timing (season wise) is impeccable. By the good graces of Mother Nature, I’ve been exploring nearby towns and taking long windy random drives and coming across hidden gems. What better than to soothe your soul with these gorgeous landscapes.
What I’ve Been Up To
Aside from my mini adventures, I’ve been continuing with my morning routine– yoga, goals, journaling, listening to podcasts, and working on certifications.
What I’m Working On
I’ve been trying to brainstorm where I want to go with my blog and my “Cup of Jo” branding (if you will) and somehow intertwine it into my social medial accounts. I really want to build something and in order for my Type A brain to formulate what it’ll be, I may need some good ol fashion inspiration. I have so many ideas, but they’re all just scattered so I’ve been working on figuring it out. ~Still a work in progress~
What I’m Excited About
This is where I usually talk about an upcoming trip that I’d be excited about but I’ve realized I don’t even necessarily need a “trip” per say because Colorado in itself is one big adventure. Ultimately, I’m just excited to find new roads to stumble on, new sights and views, and just finding treasures locally. Andrew and I do have a trip coming up in July, it’s somewhere we’ve been before (both drivable locations) but we have no idea if Airbnb will let us keep our reservations. But until we hear otherwise, we’re anticipating on going. So if all is well, I’m pretty darn excited for that.
What I’m Watching/Reading
We’ve finished a boat load of shows just to name a few: Vanderpump Rules (favorite!!!), Tiger King, Ozark, Netflix’s series “Explained”, Little Fires Everywhere. We have a lot recurring shows playing as background noise: The Office, Rick and Morty, Family Guy. A lot of movies are being thrown on; Willy Wonka and the Chocolate Factory is on Netflix so you KNOW I’ve already watched it countless times.
A show I’ve been watching solo is an oldie but goodie. I actually have never watched the full series so I’ve been making my way through it- who remembers this cast?
Yes, The Hills! I just completed the season with LC as the lead and Kristin Cavallari is now stepping in. It’s just a quick and easy watch and it helps that I can reminisce the good ol’ Laguna Beach days.
What I’m Listening To
Spotify, Spotify, Spotify, oh how I love you Spotify. I have my playlists I’ve created and will jam out to. But for a while now it’s usually always-

What I’m Wearing
Y’all I’ve jumped on the biker shorts bandwagon. I bought two pairs over the winter from Aerie because they were on sale for like $15 or something super cheap, so I figured that was my chance to purchase some and try them out. I’ve finally started wearing them as the weather became warmer and oh my lanta, I’m sold. My go-to outfit for a normal casual (and lounging) day will be a chill baggy T-shirt with biker shorts.
In the mornings/early afternoon when I’m off to find a scenic spot to do some writing, this is what I have on paired with some sneakers. On a more “dressy” day (dressy being used with a grain of salt) I love an outfit like this-
An off the shoulder or crop top with some french terry drawstring shorts or I do love a good tie waist pair of shorts too.
Looking Forward To Next Month
I’m in shock that we’re about a week away from June but with this continuous sunshine, I’m looking forward to finding new cool spots to explore with Andrew. Building upon our Colorado “things to do” list. And honestly just diving into summer. I’m hoping we can do some paddle boarding at some point out in the mountains somewhere- hopefully we’ll get to use our new boards. I also have some birthdays to celebrate, Britt being one of them 🙂 And in general, as these phases for “opening back up” are happening, I’m hoping to see that things will get back to normal sooner than later.
What Else Is New
For all my ladies out there: Every Wednesday I join Elena Cardone’s FREE 10x Ladies Networking Zoom call. If you don’t know Elena Cardone she’s just this amazing mastermind entrepreneur that speaks about women empowerment, overcoming challenges, relationships, and building an empire for yourself. I never used to be able to join because it’s on at 4PM mountain time (6PM EST) so typically I’d be in the middle of my work day and unable to join. Given the times nowadays, I can finally jump onto it and truly I find it to be useful and inspiring. Just as I do when I listen to informative podcasts I have pen and paper ready to take notes and just soak up the information like a sponge. And again, it’s FREE!! A 30 minute-1 hour mentorship call, definitely worth your while to check out.
Other than that, I don’t have much else so instead, I’m going to leave you with my suppose to be Cup of Jo photo today that didn’t make it onto the reel but I’ll happily leave it on my blog.
